Stalker arrows are tier 80 ranged ammo with 768 damage. They are the intended ammo for the hexhunter bow. If you use that bow, you will want a steady supply of stalker essence to keep your arrows stocked.
Stalker essence drops from seekers and soulgazers, but hunting these monsters takes time. Buying the essence lets you skip the grind and get right to fletching or fighting.
